Keto Cheddar Bay Bay Biscuits

2/3 cup almond flour
2 Tbsp baking powder
1 tsp garlic powder
½ tsp dried parsley
1/8 tsp onion powder
4 ounces cream cheese
1 ½ cups shredded mozzarella cheese
2 eggs
1 cup shredded cheddar cheese

Combine almond flour, baking powder, garlic, parsley, and onion powder in a small bowl and set aside. Place cream cheese and mozzarella cheese in a large microwaveable bowl and microwave on HIGH for 30 seconds. Stir well. Add the almond flour mixture and eggs to the mozzarella cheese and cream cheese and mix well. Stir in the cheddar cheese. Place a cover on the bowl and refrigerate for 20 minutes. Preheat oven to 400 degrees. Coat skillet or baking dish with non-stick spray. Place large spoonfuls of biscuit dough onto skillet/dish. Bake for 15 – 18 minutes. Remove from heat and allow to cool.

Sloppy Joe Casserole

1 lb ground beef
1/2 cup diced onions
1/4 cup chopped green pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 tsp. brown sugar
salt and pepper to taste
1 cup shredded mozzarella cheese
1 7.5oz can of pillsbury biscuits (You’ll need nine biscuits total)
1 1/2 tbsp. butter
2 cloves fresh garlic, diced
1 tsp dried oregano

Preheat oven to 350 degrees. Spray a 9x9 baking pan with non stick spray. In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids. Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper. Pour meat mixture into your dish, top with cheese. Place your biscuits on top of mixture. Bake in oven for 14 minutes. Just before the time is up, melt butter and add garlic and oregano. Remove dish from oven and using a small spoon drizzle your garlic butter over top of all your biscuits. Return to oven for 6-8 minutes, until your biscuits are a golden brown.

Gorditas

1 1/2 cups flour (you can also use whole wheat)
1 1/2 cups pancake mix
1/4 cup sugar
1 tsp. baking powder
1 egg (beaten)
1/2 cup unsalted butter (room temperature)
1/4 to 1/2 cup hot milk

In a large bowl mix together dry ingredients. Make a well in the center and add egg. Mix well. Add butter and mix until mixture resembles small peas. Add milk starting with smaller amount and combine until a dough forms; adding more flour or milk as needed. Knead until dough is smooth and elastic. Place dough back in bowl and cover with plastic wrap to rest for around ten minutes. Heat a griddle or tortilla pan to medium heat. Remove plastic wrap and form dough into 12 small balls. Flatten balls into circles around 3-4 inches wide and about a 1/2 inch or inch thick.  Cook on griddle about 2-3 minutes per side or until golden brown. 
(If using as pancakes, you can increase the sugar a bit and add a teaspoon of vanilla for extra flavor)

Flakey Cheddar Chive Biscuits

These savory biscuits were perfect alongside a bowl of chili. I threw in some garlic for an extra kick.


Flakey Cheddar Chive Biscuits

2-1/4 cups all-purpose flour
2-1/2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 cup shredded cheddar cheese
3 tablespoons minced fresh chives
1 cup buttermilk

Preheat oven to 425°. In a large bowl, whisk the first five ingredients. Cut in butter until mixture resembles coarse crumbs; stir in cheese and chives. Add buttermilk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times.
Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Bake 10-12 minutes or until golden brown. Serve warm. About 10 biscuits.
