Holiday Bacon Appetizers 


1 package Club Crackers

1 pounds thin sliced bacon, (or more depending on how many crackers you make)

Grated Parmesan cheese

Brown sugar (optional)


Lay crackers, as many as you want, face up on a cookie sheet.  Scoop either 1 teaspoon cheese, or 1 teaspoon brown sugar on top of cracker.  Cut bacon in half.  Careful wrap one half piece of bacon around the cracker not too tightly but snugly, completely covering the cracker.  Place bacon wrapped crackers onto a baking sheet that has a rack on it.  Bake in a 250 degree oven for 2 hours.

Appetizer Tomato Cheese Bread

2 tablespoons butter
1 medium onion, minced
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup mayonnaise
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
Pinch rubbed sage
2 cups biscuit/baking mix
2/3 cup 2% milk
3 medium tomatoes, cut into 1/4-inch slices
Paprika

In a small skillet, heat butter over medium heat. Add onion and cook until tender. Remove from the heat. Stir in the cheese, sour cream, mayonnaise and seasonings; set aside. In a bowl, combine the baking mix and milk to form a soft dough. Turn dough onto a well-floured surface; knead lightly for 10-12 times. Pat into a greased 13x9-in. baking dish, pushing dough up sides of dish to form a shallow rim. Arrange tomato slices over top. Spread with topping; sprinkle with paprika. Bake at 400° for 25 minutes. Let stand for 10 minutes before cutting.

Apple Butter Glazed Cocktail Franks

2 cups apple butter
1 cup chicken stock
1/4 cup BBQ sauce
1/4 cup apple juice
2 tablespoons pure maple syrup or honey
1/2 teaspoon red pepper flakes
Kosher salt
One 1-pound package smoked cocktail franks

In a large bowl, combine the apple butter, chicken stock, BBQ sauce, apple juice, maple syrup or honey, red pepper flakes and a pinch of salt. Whisk to thoroughly combine. Add the cocktail franks, stirring to mostly submerge them in the sauce. Pour franks and sauce in a slow cooker. Cover and cook on high until heated through, about 3 hours. Serve warm in the sauce.
