4 cups Rice Chex

4 cups Chocolate Chex

4 cups Honey Nut Chex

2 cups coarsely chopped pecans, toasted

1 cup packed brown sugar

1/2 cup butter, cubed

1/3 cup light corn syrup

1/2 teaspoon baking soda

2 cups semisweet chocolate chips

2 tablespoons shortening


In a large bowl, combine cereals and pecans. In a small microwave-safe bowl, combine brown sugar, butter and corn syrup. Microwave, uncovered, on high for 2 minutes, stirring once. Whisk in baking soda. Pour over cereal mixture; toss to coat. Cook the cereal mixture in batches on high in a microwave-safe bowl for 3 minutes, stirring every minute. Spread onto lined baking sheets to cool completely. In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over cereal mixture; refrigerate until set. Break into pieces. Store in an airtight container at room temperature.

Chocolate Cherry Truffles


1 box Brownie Mix, 18.4 ounces

1 cup Cherry Pie Filling

1/4 cup Canola Oil

1 large Egg

1/4 teaspoon Pure Almond Extract

1 1/2 cups Dark Chocolate

Sprinkles


Preheat the oven to 350°F. Grease a 8-inch-by-8-inch square pan with nonstick baking spray. In a large bowl, add brownie mix, cherry pie filling, oil, egg, and almond extract. Stir until the mixture is thoroughly combined. Transfer the mixture to the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few crumbs are recommended). Allow the brownies to cool completely on a wire rack. Using a fork, break the mixture into crumbs, avoiding the crunchy outer edges. (Save those for snacking!) Roll the mixture into 1-inch balls. Place the balls on a parchment or wax paper-lined baking sheet. Place the brownie balls in the freezer to chill for 30 minutes. While the truffles are chilling, melt the chocolate over a double boiler or in the microwave until smooth.  Roll the truffles, one at a time, in the chocolate, making sure they're fully coated on all sides. Use a fork to remove the truffles from the chocolate, allowing the extra chocolate fall off before placing them back on the baking sheet. Top with festive sprinkles. After truffles have hardened, store in an airtight container in the refrigerator for up to 7 days. Makes 15-20 truffles.

No Bake Chocolate Peanut Butter Oat Bars


3/4 cup butter

1/2 cup brown sugar, packed

1 tsp. vanilla

3 cups rolled oats

1/2 tsp. cinnamon

1/4 tsp. kosher salt

1 cup milk chocolate chips

3/4 cup chunky peanut butter


Line a 8-inch-by-8-inch baking dish with parchment paper, and set aside. In a medium saucepan, combine the butter, brown sugar and vanilla extract. Heat over low-heat, until the butter has melted and the sugar has dissolved. Add the oats, cinnamon and kosher salt. Cook, stirring constantly, for 4 to 5 minutes. Pour half of the oat mixture into the prepared baking dish. Spread out the mixture evenly, pressing down.  In a a small microwave-safe bowl, combine the chocolate chips and the peanut butter. Heat on high in the microwave, in increments of 40 seconds, stirring in between each increment, until melted and fully combined. Pour all but 1/4 cup of the chocolate mixture into the pan over the pressed oats, reserving the 1/4 cup for second layer. Top with the remaining oats and drizzle with the remaining chocolate mixture. Refrigerate for 4 hours, or until set.

2 cups applesauce

1-1/2 cups sugar

1/2 cup shortening

2 large eggs, lightly beaten

2 cups all-purpose flour

1 tablespoon baking cocoa

1-1/2 teaspoons baking soda

1 teaspoon salt

1 teaspoon each ground cinnamon, nutmeg, allspice and cloves

1 cup raisins

1/2 cup semisweet chocolate chips

1/2 cup chopped walnuts


Topping:

1/2 cup semisweet chocolate chips

1/2 cup chopped walnuts

2 tablespoons brown sugar


In a large bowl, beat the applesauce, sugar, shortening and eggs. Combine the flour, cocoa, baking soda, salt, cinnamon, nutmeg, allspice and cloves; gradually beat into applesauce mixture until blended. Stir in the raisins, chocolate chips and walnuts. Pour into a greased 13 x 9 baking pan. Combine topping ingredients and sprinkle over batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1 can (14 ounces) sweetened condensed milk

2 cups semisweet chocolate chips

1/2 cup coarsely chopped almonds

1/2 cup chopped candied cherries

1 teaspoon almond extract


In a microwavable bowl, combine milk and chocolate chips. Microwave on high until chips are melted and mixture is smooth when stirred, about 1 minute. Stir in almonds, cherries and extract. Spread evenly in a greased 8-in. square pan. Cover and chill until firm. Cut into squares. Store, covered, in the refrigerator.

White Chocolate Peppermint Popcorn


30 peppermint candies

1 pound white chocolate chips 

2 tablespoons coconut oil 

10 cups store-bought popped kettle corn

1/4 cup mini semisweet chocolate chips 

2 tablespoons red sprinkles 

2 tablespoons green sprinkles 

2 tablespoons red sanding sugar 

2 tablespoons green sanding sugar 


Line 2 baking sheets with waxed paper. Place the peppermint candies in a large resealable plastic bag. Crush with a rolling pin until you have a mix of smaller chunks and crumbs. Set aside. Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in increments of 15 to 30 seconds (this will depend on your microwave), stirring after each, until completely melted and smooth. Place the kettle corn in a large bowl. Pour the white chocolate mixture over the popcorn and fold with a spatula until evenly coated. Transfer the popcorn to the lined baking sheets in a single layer. Working quickly, sprinkle the popcorn with the crushed peppermint candies, mini chocolate chips, red and green sprinkles and red and green sanding sugar. You can you use more or less of each topping based on what you like. Allow the popcorn to dry to the touch, about 15 minutes, before packing in bags as gifts or storing in an airtight container.

Chocolate Lockdown Cake


3 cups crushed cookies (I used chocolate teddy grahams, but you can use any hard cookie)

1 1/2 cups of milk

2 1/4 tsps. baking powder


Preheat oven to 350 degrees Fahrenheit. Grease an 8x 8 baking pan and set aside. In a food processor, grind your cookies of choice until they are very fine. (Measure your cookies after they are crushed). Pour cookies into a mixing bowl and add milk and baking powder. Mix until combined; batter will be runny. Pour into prepared pan and bake 15-20 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Do not over bake. Cool in pan 15 minutes, then invert onto a serving plate. Frost with your favorite frosting

Oatmeal Chocolate Chip Cake

1-3/4 cups boiling water
1 cup uncooked oatmeal
1 cup packed brown sugar
1 cup sugar
1/2 cup butter, softened
3 large eggs
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking cocoa
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 package (12 ounces) semisweet chocolate chips, divided
3/4 cup chopped walnuts

In a large bowl, pour water over oatmeal. Allow to stand 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs, one at a time, mixing well after each addition. In a separate bowl sift flour, soda, cocoa, salt, and cinnamon together. Add to batter. Mix well. Stir in half the chocolate chips. Pour into a greased 13x9-in. baking pan. Sprinkle top of cake with walnuts and remaining chips. Bake at 350° for about 40 minutes.

4 large eggs, separated
1/3 cup granulated sugar
1/3 cup packed light or dark brown sugar
1 Tablespoon strong brewed coffee *or* 1 teaspoon espresso powder
1/4 cup unsalted butter, melted
1 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 cup natural unsweetened cocoa powder, plus 2 Tablespoons (for rolling)
1 teaspoon baking powder
1/4 teaspoon salt

Vanilla Whipped Cream
1 cup cold heavy cream or heavy whipping cream
3 Tablespoons granulated sugar or confectioners’ sugar
1 teaspoon pure vanilla extract

Chocolate Topping
1/2 cup heavy cream or heavy whipping cream
one 4 ounce bar semi-sweet chocolate, finely chopped
optional for glossy shine: 1 teaspoon light corn syrup

Preheat oven to 350°F. Spray a 12x7 baking sheet pan with nonstick spray or grease with butter, so the parchment paper sticks. Then line it with parchment paper so the cake seamlessly releases. Spray or grease the parchment paper too. Using a hand mixer or a stand mixer fitted with whisk attachment, beat the egg whites and granulated sugar together in a medium bowl on high speed for 5 minutes or until stiff peaks form. Set aside. In another bowl, beat the egg yolks, brown sugar, and vanilla extract together until pale and creamy, about 2 minutes. Sift the flour, cocoa powder, baking powder, and salt together into a large bowl bowl. Pour the melted butter, coffee, and egg yolk mixture over the dry ingredients. Beat everything together on medium speed until completely combined. Using a rubber spatula or wooden spoon, gently fold in the egg whites until completely combined. Avoid over-mixing. Batter will be very light. Spread batter evenly into prepared pan. It will be a very thin layer. Shimmy the pan on the counter to smooth out the top. Bake for 10 minutes or until the top of the cake gently springs back when touched with your finger. As the cake bakes, place a piece of parchment paper (larger than the cake) or a thin kitchen towel flat on the counter. Sprinkle with a light coating of cocoa powder. Once the cake comes out of the oven, immediately invert it onto the parchment/towel. Peel off the parchment paper that was on the bottom of the cake as it baked. Starting with the narrow end, slowly and gently roll the cake up with the parchment/towel. The cake will be warm. Allow the cake to cool completely rolled up in the parchment/towel. Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium to stiff peaks form, about 2-3 minutes. Slowly and gently unroll the cake. Spread whipped cream evenly on top, leaving about a 1/2 inch border around the cake. Gently roll the cake back up, without the parchment/towel this time. Place on a wire rack set on a baking sheet. Place chopped chocolate and corn syrup, if using, in a medium bowl. Heat the cream in a small saucepan until it begins to gently simmer. Pour over chocolate, then let it sit for 2-3 minutes to gently soften the chocolate. Slowly stir until completely combined and chocolate has melted. Pour ganache all over cake roll. Refrigerate for at least 30-60 minutes before slicing and serving. Cover leftover cake and store in the refrigerator for up to 3 days.

1 cup butter, softened
1 cup confectioners' sugar
1/2 teaspoon salt
2 teaspoons maraschino cherry juice
1/2 teaspoon almond extract or cherry extract
6 drops red food coloring, optional
2-1/4 cups all-purpose flour
1/2 cup chopped maraschino cherries
54 milk chocolate kisses, unwrapped

Preheat oven to 350°. In a large bowl, beat butter, confectioners' sugar and salt until blended. Beat in cherry juice, extract and, if desired, food coloring. Gradually beat in flour. Stir in cherries. Shape dough into 1-in. balls. Place 1 in. apart on greased baking sheets. Bake 8-10 minutes or until bottoms are light brown. Immediately press a chocolate kiss into center of each cookie (cookie will crack around edges). Cool on pans 2 minutes. Remove to wire racks to cool. Makes 3-4 dozen.

1 cup walnut halves

Place all ingredients in a large bowl; toss to combine. Store in an airtight container.

Saltine Cracker Candy

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped nuts 

Preheat oven to 400 degrees. Line a buttered or non stick foil covered jelly roll pan with saltine crackers in single layer. In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely. Bake for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

Chocolate Butterscotch Caramel Bars

 1 1/2 cups all-purpose flour 
1 1/2 cups regular or quick oats 
1 cup packed brown sugar 
1 teaspoon baking powder 
1/4 teaspoon kosher salt 
1 3/4 sticks (14 tablespoons) cold salted butter, cut into pieces 
1 (13.5-ounce) can dulce de leche (I used Nestle La Lechera) 
About 1 cup Spanish peanuts
About 1 cup butterscotch chips
About 1 cup mini chocolate chips

Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil and spray with nonstick spray. Mix together the flour, oats, brown sugar, baking powder and salt in a bowl. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Sprinkle the mixture into the prepared pan and pat lightly to pack it slightly. Bake until light golden brown on top and done in the middle, watching to make sure it doesn't burn, 30 to 35 minutes. Allow to cool for 15 minutes. Spoon the dulce de leche into a microwave-safe bowl and microwave to just slightly soften it, about 45 seconds. Scoop it on top of the oatmeal base and use an offset spatula to spread it out to the edges and into an even layer. Sprinkle on a layer of peanuts so that they completely cover the caramel and use your hands to gently press them into the caramel. Sprinkle on the butterscotch chips and mini chocolate chips in generous layers. The warmth of the cookie base and caramel should slightly soften the butterscotch and chocolate chips. When that happens, use your hands to very gently press the chips just enough to anchor them together (but not enough to misshape them). If the pan isn't warm enough, pop it into the oven for 30 seconds or so and gently press the chips to anchor them together. Chill the bars for 2 to 3 hours to make them easy to slice. Remove them from the pan, place on a cutting board and use a long serrated knife to cut into small squares (they're rich!). Serve cold or at room temperature.

Texas Sheet Cake Cookies

1/2 cup butter, room temperature
1/3 cup granulated sugar
1 egg
1 tsp vanilla
1 tsp baking powder
1/2 tsp salt
1 1/3 cup flour
1/2 cup semi-sweet chocolate chips, melted

Icing
1/2 cup butter
2 Tbsp cocoa powder
3 Tbsp milk
2 1/2 cups powdered sugar

Preheat oven to 350°. Line baking sheet with parchment or silicone mat, set aside. In a bowl beat butter and sugar together until light, scraping sides frequently. Add in egg and vanilla and continue mixing until incorporated. Mix in baking powder and salt. Turn mixer to low and slowly add in flour. Dough will be thick. In a microwave safe bowl heat chocolate chips on high in 30 second increments until melted, stirring after every 30 seconds. Mix melted chocolate directly into cookie dough until evenly mixed. Drop dough by a measured tablespoon sized mounds onto baking sheet. Bake for 7-8 minutes until cookies just appear set. They will still be very soft on the inside. DO NOT overbake! Transfer to a wire rack to cool. In a medium saucepan combine butter, cocoa powder and milk over medium heat, whisking until melted together. Remove from heat and whisk in powdered sugar. Pour icing over cookies and allow icing to set before serving. (Makes 18-24 cookies)

1 3/4 cups boiling water
1 cup rolled oats
1 cup packed brown sugar
1 cup white sugar
1/2 cup butter
2 eggs
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup semisweet chocolate chips
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Mix water and oatmeal in mixing bowl, and let sit 10 minutes. Add sugars, butter or margarine,and eggs, and vanilla. Mix well. Add flour, baking soda, cocoa, salt, and cinnamon. Blend. Pour into greased and floured 9 x 13 baking dish. Top with chocolate chips and chopped nuts. Bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes.

Hugs and Kisses Cookies

12 ounces semisweet chocolate chips
1 cup packed brown sugar 
1 cup granulated sugar 
1 stick (8 tablespoons) salted butter, softened 
3 large eggs 
1 tablespoon vanilla extract 
2 cups all-purpose flour 
1/2 cup cocoa powder 
1 teaspoon baking powder 
1/2 teaspoon kosher salt 
2 cups sprinkles 

Preheat the oven to 350 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper. In a microwave-safe bowl, add the chocolate chips. Microwave in 30-second intervals, stirring between each interval, until melted. Allow to cool.
Using a stand mixer with a paddle attachment, mix the brown sugar, granulated sugar, butter and cooled chocolate on medium speed until combined. Add the eggs one at a time, mixing after each addition, then the vanilla. Scrape the sides of the bowl and continue to mix on medium speed until combined. Whisk together the flour, cocoa powder, baking powder and salt in a bowl. Gradually add the dry ingredients to the mixer and mix until just combined. Put the red sprinkles in a bowl. Scoop mounded tablespoons of the dough. Roll into balls and roll each ball in the sprinkles to cover completely. Place on the prepared baking sheets. Bake until the cookies are poufy and set, about 10 minutes. When still warm, press a chocolate candy into the top of each. Let the cookies sit on the baking sheets for 2 minutes, then remove them to a wire rack to cool completely. Repeat with the remaining dough, sprinkles and chocolate candies.

Peanut Butter Chocolate Rice Krispie Squares

Peanut Butter Chocolate Rice Krispie Squares

6 tablespoons unsalted butter
16 ounces mini marshmallows 
1/2 teaspoon kosher salt 
6 tablespoons peanut butter 
2 teaspoons vanilla extract
6 1/2 cups crispy rice cereal 
2 1/2 cups coarsely crushed graham crackers (about 9 rectangles) 
1 cup milk chocolate chips 
1/4 cup rainbow sprinkles, plus more for decorating 

Line an 8-inch square baking dish with parchment paper, allowing 1-inch wings to hang over the edges; set aside. In a large pot over medium heat, melt the butter. Add the marshmallows and salt and cook, stirring, until the marshmallows are melted and smooth. Remove from the heat and stir in the peanut butter and vanilla (the peanut butter can still be swirly). Add the cereal, crushed graham crackers, chocolate chips and sprinkles and fold with a large rubber spatula to combine. Pour the mixture into the prepared baking dish, using the spatula to spread it out evenly. Place a piece of parchment on top and then use your hands to press the mixture down very firmly. Top with additional sprinkles as desired. Let the mixture firm up in the refrigerator for 1 hour, then cut into squares.

35 saltines
1 cup butter, cubed
1 cup packed brown sugar
2 cups (12 ounces) semisweet chocolate chips
1 cup chopped nuts (either pecans, peanuts, almonds, or walnuts)

Preheat oven to 350°. Line a 15x10x1-in. baking pan with foil; grease foil. Arrange saltines in a single layer on foil.In a large heavy saucepan, melt butter over medium heat. Stir in brown sugar. Bring to a boil; cook and stir 3-4 minutes or until sugar is dissolved. Spread evenly over crackers.Bake 8-10 minutes or until bubbly. Immediately sprinkle with chocolate chips. Allow chips to soften for a few minutes, then spread over top. Sprinkle with nuts. Cool slightly. Refrigerate, uncovered, 1 hour or until set. Break into pieces. Store in an airtight container.

1/4 cup, and 1 1/2 tbsp. unsweetened cocoa powder, divided
1/2 cup milk
1 tsp. vanilla extract

Preheat the oven to 350 degrees. Melt butter in an 8x8 inch baking dish while the oven preheats. In a medium bowl, stir together the flour, 3/4 cup sugar, and 1 1/2 tablespoons cocoa. Stir in milk and vanilla until smooth. Spoon this batter over the melted butter in the baking dish.Stir together the remaining cup of sugar and 1/4 cup cocoa powder. Sprinkle over the batter. Slowly pour boiling water over the top of the mixture.Bake for 30 minutes in the preheated oven, until set. Serve slightly warm.

1 package (17-1/2 ounces) peanut butter cookie mix
3 tablespoons canola oil
1 tablespoon water
1 large egg
1 package (10 ounces) peanut butter chips
2/3 cup corn syrup
1/4 cup butter, cubed
2 cups Rice Krispies
2 cups salted peanuts 
2 teaspoons vanilla extract
3 cups miniature marshmallows 

In a large bowl, combine the cookie mix, oil, water and egg. Press onto the bottom of a greased 13-in. x 9-in. pan.Bake at 350° for 12-15 minutes or until set. Meanwhile, in a large saucepan, combine the chips, corn syrup and butter. Cook and stir over medium-low heat until smooth. Remove from the heat. Stir in the Rice Krispies, peanuts and vanilla.Sprinkle marshmallows over crust. Bake 1-2 minutes longer or until marshmallows begin to puff. Spread cereal mixture over top. Cool completely on a wire rack. Refrigerate until firm. Cut into bars. Makes about 2 dozen.
