Taco Pasta Salad

2 cups uncooked spiral pasta

1 pound ground beef

1 envelope taco seasoning

3 cups shredded lettuce

2 cups halved cherry tomatoes

1 cup shredded cheddar cheese

1/2 cup chopped onion

1/2 cup chopped green pepper

1/2 cup Catalina salad dressing

Tortilla chips


Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in the taco seasoning; cool. Drain pasta and rinse in cold water; stir into meat mixture. Add the lettuce, tomatoes, cheese, onion, green pepper and dressing; toss to coat. Serve topped with crushed tortilla chips.

Taco Pie

1 pd ground beef 
1 pkg (1.25 oz.) taco seasoning mix
1 onion, chopped
1 cup water
I pkg. (8 oz.) crescent dough sheet
1 cup sour cream
1 cup shredded Monterey Jack cheese
2 cups Doritos (any flavor), crushed and divided

Preheat oven to 375 degrees. Lightly grease a 9x13 baking dish. Spread crescent dough over the entire bottom of dish. Set aside. Cook ground beef over medium high heat until browned; drain and return to heat. Add onions, water, and taco mix. Stir to combine and simmer five minutes, or until slightly thickened. Spread 1 cup of crushed Doritos over top of dough. Cover with meat mixture. Spread sour cream over the top of meat. Sprinkle cheese over the sour cream, and top with remaining Doritos. Bake 15-20 minutes. Top with diced tomatoes and hot sauce; if desired.
