1 pound ground beef

1 medium onion, chopped

1/2 large green pepper, chopped

4 garlic cloves, minced

8 cups beef broth

2 cans (14 1/2 ounces) Italian steed tomatoes

1 package (9 ounces) frozen cut green beans

1 can (8 ounces) tomato sauce

1 cup ditalini or other small pasta

1 tablespoon Worcestershire Sauce

2 teaspoons dried oregano

1 teaspoon dried basil

1/ teaspoon pepper


In a Dutch oven, cook the beef, onion, and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables and pasta are tender.

Roadside Diner Cheeseburger Quiche

1 sheet refrigerated pie crust
3/4 pound ground beef
2 plum tomatoes, seeded and chopped
1 medium onion, chopped
1/2 cup dill pickle relish
1/2 cup crumbled cooked bacon
5 large eggs
1 cup heavy whipping cream
1/2 cup 2% milk
2 teaspoons prepared mustard
1 teaspoon hot pepper sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups shredded cheddar cheese
1/2 cup shredded Parmesan cheese

Preheat oven to 375 degrees. Unroll crust into a 9-in. deep-dish pie plate; flute edges and set aside. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, onion, relish and bacon. Transfer to prepared crust. In a large bowl, whisk the eggs, cream, milk, mustard, pepper sauce, salt and pepper. Pour over beef mixture. Sprinkle with cheeses. Bake until a knife inserted in center comes out clean, 50-60 minutes. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Let stand for 10 minutes before cutting.

Taco Pie

1 pd ground beef 
1 pkg (1.25 oz.) taco seasoning mix
1 onion, chopped
1 cup water
I pkg. (8 oz.) crescent dough sheet
1 cup sour cream
1 cup shredded Monterey Jack cheese
2 cups Doritos (any flavor), crushed and divided

Preheat oven to 375 degrees. Lightly grease a 9x13 baking dish. Spread crescent dough over the entire bottom of dish. Set aside. Cook ground beef over medium high heat until browned; drain and return to heat. Add onions, water, and taco mix. Stir to combine and simmer five minutes, or until slightly thickened. Spread 1 cup of crushed Doritos over top of dough. Cover with meat mixture. Spread sour cream over the top of meat. Sprinkle cheese over the sour cream, and top with remaining Doritos. Bake 15-20 minutes. Top with diced tomatoes and hot sauce; if desired.

Beef Macaroni Soup

1 pound lean ground beef
salt and pepper to taste
1/4 tsp. chili powder
1 clove garlic
1 small onion, chopped
2 cups frozen mixed vegetables
1 can (14-1/2 ounces) diced tomatoes with basil, garlic, and oregano, undrained
2 1/2 cups beef broth
1/2 cup uncooked elbow macaroni

In a large saucepan, cook beef, salt and pepper, chili powder, garlic, and onion over medium heat until beef is no longer pink. Stir in the mixed vegetables, tomatoes, and broth. Bring to a boil; add macaroni. Reduce heat; cover and simmer for 8-10 minutes or until macaroni and vegetables are tender.
