Tomato Zucchini Strata
1 tbsp butter
1/2 cup chopped onion
1 clove garlic, minced
40 saltine crackers
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated
1 large zucchini, sliced (peeled or unpeeled)
1/4 cup grated Parmesan cheese, divided
3 tomatoes, sliced
1 1/2 cup milk
4 eggs, beaten
1 tsp dried basil
1/2 tsp dried oregano
Preheat oven to 350 degrees. In a skillet, sauté onion and garlic in butter. Meanwhile grease the bottom of a two quart shallow baking dish and line with three rows of crackers; each row having 6 crackers overlapping. Sprinkle with half of the cheddar cheese, mozzarella cheese, and onion garlic mixture followed by half of the zucchini and 1 tbsp Parmesan cheese. Repeat with a second layer same as the first. Arrange tomato slices around the edge and place a line of four crackers, overlapping, down the center. Combine milk, eggs, basil, and oregano. Pour over casserole, and sprinkle with remaining Parmesan cheese. Bake for 40 minutes.
