Apple Pumpkin Muffins

I know it's a little early, but I couldn't resist.  These muffins are moist and delicious.  I used bigger chunks of apples and threw in some walnuts and a pinch of cloves.

Apple Pumpkin Muffins

2-1/2 cups all purpose flour
2 cups sugar
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. salt
1/4 tsp. ground nutmeg
2 eggs
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped, peeled, tart apples

In a large bowl combine the first seven ingredients. In a small bowl combine eggs, pumpkin, and oil; stir into dry ingredients just until moistened. Fill greased or paper lined muffin cups two-thirds full.  Bake at 350 degrees for 30-35 minutes.  Cool ten minutes before removing from pan.  About 1-1/2 dozen.
